Weekly Scoop #4 - 10/17/2021

Wash and Peel 2-3 Beet's. Chop into any shape desired. Smaller pieces make for quicker cooking time and easier to eat in salads! Place all pieces on a sheet pan (lined with parchment paper if you have it). Chop up about one small onion (1/2 large onion) very thinly and toss add on top off beets.

Optional chop 1-2 sticks of celery very very thinly and add to beet/onions.

Drizzle some olive oil over the whole tray and Salt and Pepper everything to your liking.

Add about a tablespoon of freshly chopped herbs or 1/2 tablespoon dried herbs.

Mix everything together to coat things evenly.

Place in a 325 degree oven for 45-60 minutes but check it after 30 and stir to evenly cook.

Pull out of oven when beets are fork tender.

Let cool 10-15 minutes and serve over a salad or as a side dish!
