I was given a huge bag of very fresh lemons and there was no way I could use them all before they went bad. What do I do when I have too many lemons and not enough time?
Juice them and freeze the juice into ice cube trays!
That way anytime I need lemon juice, I just pull it out of the freezer and defrost only whats needed.
Juice your lemons using whatever juicing method you normally use. I like to strain my juice through a fine tea strainer to get all the pulp out (Karson calls them "flakes").
Once I have the strained juice, I pour it into the ice cube trays and put the whole tray into the freezer. Wait until the juice is completely frozen.
Then pop out all of the individual cubes and place them into an airtight freezer bag or container. If you are having trouble getting your cubes out, run some water on to the bottom of the ice cube tray for just a few seconds. The suborn cubes should be much easier to remove now.
Put them right back into the freezer after bagging so they don't melt. I filled three quart size freezer bags full of pure lemon juice.
You won't see me buying any lemon juice for a while!
Don't forget you can freeze any kind of juice that you like.
