Bountiful Baskets - April 28th

I can't believe how long it's been since I got a basket.  I was so excited to finally get to order one this week.  My meal planning has been in the dumpster the past few weeks without the produce from these baskets. It really helps me stay committed to making dinners, when I see all this stuff in my fridge begging for me to use it up.  Our usual pickup was not available this week, so I got to car pool to another site with a friend which was a nice treat.  This week we had a heavy box.  I could not wait to get it home and peek inside.

Bunch of Kale
Head of Romaine
3 heads of Broccoli
Bunch of Asparagus
2 Yellow Squash
2 Cucumbers
1 Large Cabbage
1 Large Beet
4 Avocados
2 Mangoes
1 Honeydew Melon (that feels soft, so I'm wondering if it's still good?)
6 Apples
6 Bananas

I was really hoping for some yummy berries, but there are tons of good veggies in there I will be able to use towards my weekly dinners.

When I bring home asparagus I always like to cut an inch or so of the bottoms and place the ends upright in water before putting it into the refrigerator to make it stay fresh longer. If I still have not used it after two days I will cut a little more off the ends and change the water again. It really seems to help keep it nice a crisp until I'm ready to use it, and makes it last much longer.
