These wonderful sweet potatoes just SCREAM fall and they are as easy as can be.
- 2-3 large sweet potatoes, peeled and chopped into rough chunks (depends on how many you need to make)
- 3 tablespoons maple syrup
- 2-3 tablespoons extra-virgin olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Preheat oven to 375 degrees F.
