Quick sides are well....quick and delicious! Only a few ingredients in this dish and the results are wonderful. Pair it with some grilled meat and a fresh salad or seasonal vegetable for a simple weeknight meal. These will only take you a few minutes of prep and then let your oven (or bbq) do the all the work! I like to use white, yellow or red potatoes for this recipe and I just rinse them and slice in half before using.
2-3 pounds small white, red or yellow potatoes
1/4 cup olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6-9 cloves of garlic, peeled
2 tablespoons minced fresh parsley (or 2 teaspoons dried)
