Quick sides are well....quick and delicious!  Only a few ingredients in this dish and the results are wonderful.  Pair it with some grilled meat and a fresh salad or seasonal vegetable for a simple weeknight meal.  These will only take you a few minutes of prep and then let your oven (or bbq) do the all the work!  I like to use white, yellow or red potatoes for this recipe and I just rinse them and slice in half before using. 

2-3 pounds small white, red or yellow potatoes
1/4 cup olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6-9 cloves of garlic, peeled
2 tablespoons minced fresh parsley (or 2 teaspoons dried)

Preheat the oven to 400 degrees F.

Cut the potatoes in half and place in a large bowl with the olive oil, salt, pepper, and garlic cloves; toss until the potatoes are well coated.

Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 35-45 minutes, or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

Remove the potatoes from the oven, toss with parsley season to taste, and serve hot.
