Edamame Hummus


This recipe is a fun alternative to chickpea hummus and it's amazingly simple and delish!  Made it yesterday for the first time to bring to a pool party.  It turned out great and even most of the kids couldn't get enough!  I was told to post the recipe asap.  So here it is ladies.  Enjoy!

Quick note: If you have trouble finding Tahini, I found a great one at Trader Joes in the refrigerated cheese section. 

1tsp salt
½tsp pepper
12 oz bag of frozen shelled edamame
¼cup tahini
4tbsp fresh lemon juice
3cloves of garlic
1tsp cumin
¼cup olive oil

Bring large pot of salted water to boil. Cook edamame until tender, about five minutes. Drain, reserving ½ cup cooking liquid. Rinse edamame under cool water.
In your food processor, add all ingredients and puree until desired consistency. Taste and season with any additional salt and pepper, if desired.
Cover and chill at least one hour.
Serve with some pita chips, or pita bread.
