Yummy Baked Beans

My mother in law makes these great baked beans.  It's such an easy way to doctor up some canned beans, and they taste better than any beans you can buy.  Try them for your next family BBQ.  Guaranteed to be a favorite!

This recipe serves ten people easy. 

4-5 strips of bacon
1 small yellow onion (about 3/4 cup)
4 small cans of Van De Camp Beans (pork-n-beans)
1 small can of crushed pineapple
1/4 cup ketchup
2 tablespoons yellow mustard
2 tablespoons brown sugar (any kind)

First cut your bacon into small pieces.  Fry them in a large flat bottomed pan until VERY crisp, but not burning!
While the bacon is cooking dice your onion.  When bacon is done, drain most (not all) of your grease out of the pan. You want to keep your bacon in the pan though, so be very careful and you can always use a clean paper towel to blot up some of that grease if your pan if it's too heavy. 
Add diced onion and cook over medium heat until onion is translucent, about five minutes. 
Add your crushed pineapple to the bacon & onions.  Then open all your can's of beans and take the little piece of fat that is floating on the top out and discard.  Dump all your beans into your bacon mixture and add the ketchup, mustard and brown sugar.  Finish it off with a few grinds of fresh black pepper. 
Stir it all up gently, and your done! You can make these ahead of time, just put them into a oven safe dish and refrigerate.  When you are ready to eat, put them in a 350 degree oven until heated through usually about 15 minutes!
