Crispy Sweet Potato Fries



I have tried to make sweet potato fries at home and it has not always worked so well.  I like a nice crispy fry and I have never been able to achive that "perfect fry" at home with out deep frying them (which I just wont do).  I recently found this recipe and decided to give it a try.  I am telling you, these fries are crisp! and GREAT! Plus did I mention there is not a single drop of oil in them! The eggs whites work perfect and these have became a family favorite.

Sweet Potato Fries

Pre-heat oven to 475°-500°

Get your spice mix ready
1 Tbsp Kosher Salt
1/2 Tbsp Course Ground Black Pepper
1/2  Tbsp Brown Sugar
1 Tbsp Granulated Garlic
1 Tbsp Dried Parsley

Mix together and set aside
1/4 Cup Spice Mix
1/4 Cup Flour

2 Large Sweet Potatoes
Peel, rinse and cut into strips – the thinner the strips the faster they cook!
Blanch in boiling water 2-3 minutes. Then Drain and spray with COLD water to stop the cooking.  Dry with paper or clean dish towel.

2 Egg Whites
In large bowl whisk until all frothy
Toss in Sweet Potatoes and coat well
Sprinkle Spice Mix over a couple tablespoons at a time and mix gently after each addition. 

Spray a pizza screen or cookie sheet pan WELL and distribute fries so they don’t over-crowd each other – you don’t want to steam them! 

Bake for 20 minutes and check on them often, every 5 or so minutes so they don’t burn – cooking time will vary based on the thickness of your fries.
